I recently got Sitecore FedAuth to with WS-Fed. You should not set the AuthenticationTypeAuthenticationType to WsFederationAuthenticationDefaults.AuthenticationTypeWsFederationAuthenticationDefaults.AuthenticationType. Instead call the GetAuthenticationType()GetAuthenticationType() method. If you do not change this the external cookie will not get set after the token is posted back from ADFS and things will fail after that. Also

Also in the processcore method you should only set the WsFederationAuthenticationOptionsWsFederationAuthenticationOptions not run the app.MapWhen..app.MapWhen.. etc code Sitecore will do this for you since you have set this in identityProvidersPerSitesidentityProvidersPerSites. The code in process core should be:

protected override void ProcessCore(IdentityProvidersArgs args)
{
    args.App.UseWsFederationAuthentication(CreateWsFederationAuthenticationOptions(siteConfig));
}
